Whether you have recently been diagnosed as having gluten intolerance (such as celiac sprue) or have had it for years, you know that avoiding gluten is not an easy task. Many are told - like I was - that all they need to do is "avoid wheat" and their symptoms will improve, only -as I did - to continue to be sick. Three years after I was told to avoid wheat I found out that gluten was the real culprit. I learned that gluten is a protein that is found in wheat, barley, oats, rye, and close to a dozen other grains. It is in many products other than breads and is often disguised in ingredient lists. Even though oats are gluten free they are on the list of ingredients to avoid because they are usually contaminated with gluten due to the way they are either stored, handled, and/ or processed. That's when my mission began!! I was determined to find out all I could about gluten and the effects it has on the body. Also, since I had many food sensitivities (see my story) and one of my children could not have any dairy I wanted to figure out how to adapt the recipes my family and I loved to eat.
With the experience I gained over the years learning how to live
gluten free for my own survival I now teach others how to do the
same. My goal with this site and the classes I teach is to educate and coach you on how to live a healthy life regardless of what foods or other allergens you need to avoid.
